Onion Rings that are Healthy? WHAT?

Let me tell you, I love fried foods. Deep-fried in sizzling oil, piping hot and crunchy with a nice dash of salt. It just makes you feel good! The problem with most fried foods is, while they make you feel cozy and great for the moment, in the long run they can cause you to gain weight, have a weak heart, along with numerous other health problems.

The good news is, there’s a healthy alternative that is every bit as yummy!

The oil used to fry these up is expeller pressed coconut oil, which has all of the natural, healthy benefits of coconut oil without the taste that would interfere with the onion rings!


1 large onion
1 egg
2 Tbsp  flour
2 Tbsp grated (or powdered) parmesan cheese
1/8 tsp garlic powder
1/4 tsp parsley flakes
1/8 tsp cayenne pepper (optional; I left this off)
salt to taste
1/4 cup coconut oil for frying


Heat the oil in a medium saute pan.  Meanwhile, beat the egg in a shallow bowl.  Combine the flour, parmesan, garlic powder, parsley flakes, cayenne and salt in a shallow bowl.  Slice up your onion to a thickness of about 1/2 – 3/4 of an inch and break up the rings until you have a big pile.  Add all of the onion rings to the beaten egg and mix thoroughly so they are well coated.  Dip the onions in the egg, and then in small batches coat with the breading mixture. Flip ’em on into the hot oil!

Fry until golden brown and then turn with a fork or tongs to brown the other side.  Remove to a plate lined with paper towels to soak up any excess oil.

There you go! There is not one unhealthy ingredient in that recipe. The onion rings are delicious and crispy with an extremely satisfying onion-y taste. The spices complement it perfectly. They are ready to dip in your favorite sauce, or just to enjoy plain! That’s what I did.
