Rapadura Brownies

Many years ago, we used to buy Rapadura from the health food store. The box it came in had a recipe for chocolate Rapadura brownies on it. We tried it once, and we liked it so much that we cut out the recipe, hole punched it and put it in our big 3-ring binder full of family recipes. We’ve made it pretty often ever since, and it’s always a big hit at pot lucks.

1 stick butter
2/3 cup chocolate chips
4 eggs
1/4 teaspoon salt
1 1/2 cups Rapadura Whole Organic Cane Sugar
1 cup unbleached white flour
1/2 cup cocoa powder
1 cup walnuts (optional)
1/2 cup additional chocolate chips (feel free to adjust to your own taste!)

Preheat the oven to 350. Grease a 9″ x 13″ pan. Set aside.

In a saucepan over low heat, melt the 2/3 cup of chocolate chips with the butter. Mix together, and set aside until it’s completely cool.

In a seperate bowl, beat the eggs at salt until foamy, then mix in the Rapadura.

Once the chocolate and butter mixture cools, stir in the sugar and egg mixture until just blended. Belnd flour and cocoa and stir into batter until barely mixed. Add the additional chocolate chips and walnuts, if using. Pour into the greased pan and bake for about 25 minutes. Cool, cut into squares and enjoy.
