What’s a Freestone Peach?
Freestone peaches have a pit that pops out easily when the peach is ripe. They’re great for canning and freezing because they’re just so easy to work with. Of course, they’re even better eaten fresh, with juice dripping down to your elbow.
How are These PeachesΒ Grown?
It’s pretty unheard of to grow true organic peaches here in the southeast corner of the USA, so we looked hard to find the closest thing to organic possible. We absolutely love the orchard we found! They are willing to talk freely about their growing practices, and we’ve found them to be particularly careful to grow as naturallyΒ as possible. This growing method is commonly called Integrated Pest Management. You can read more about it by clickingΒ here.
Our family isΒ especially set on organic peaches, or at least something close,Β so weΒ hope this helps you out as much as it helped us to speak with the wonderful people at this orchard.
What’s the Difference Between Number 2 & Number 1Β Peaches
Number 2 peaches are either small or elseΒ imperfect, whereas the number 1’s are more uniform in size and unblemished.Β The photo aboveΒ leftΒ shows number 2 peaches we got in June of 2011. Look closely and you’ll see a few of the blemishes that make these ‘number 2’ fruit. In general, the imperfections are only skin deep, so your number 2 peaches should keep just as well as the number 1’s.
Here are a couple examples of the imperfectionsΒ you may find in your box of number 2 peaches; peaches with strange or elongated shapes, a groove where the fruit grew next to a twig,Β discoloration or a rough patchΒ on the skin, sometimes (rarely) a small cut. And sometimes we can’t tell why a peach was considered a number 2, because to us, they look just fine.Β It’s really a mix.
How to Store and Ripen Peaches
Our neighborΒ Wilda has an easy, reliable way to store peaches that keeps her peaches fresh considerably longer than refrigeration alone. Last summer, I think she and her husband were still eating fresh peaches 4 weeks after she picked up her box from us!Β All you need to do it yourselfΒ is some paper towels and a couple plastic grocery bags. Place a few paper towels in the bottom of one of the grocery bags, then set a layer of unripe peaches into the bag. Add another layer of paper towels and another layer of peaches on top of the first, then top it off with one more layer of paper towels. Now slip another bag over the first to loosely cover the opening and you’re done. Just set the bag gently into the fridge.Β You’ll want to peek into the bag every few days to make sure all your fruit is still sound.
Store theΒ unripened peaches in the refrigerator until a couple days before you’d like to eat them. They’ll keep longer when refrigerated unripe. To ripen, just place firm peaches on the counter for a day or two.
Peach Measurements
3-4 medium or 2-3 large peaches = about 1 lb
1 lb peaches = 3-4Β cups sliced peaches, loosely packed
1 lb peaches = 2Β cups peach puree
1/2 bushel =Β 25 lbs
How to Peel Peaches Easily
- Prepare a cold water bath, either in a sink or large bowl.
- Place the peaches to be peeled in a colander, or basket, or drop them directly into a deep pot of boiling water for almost oneΒ minute. Make sure that each peach is completely submerged and that they are free enough for water to flow all around them.
- After one minute in the boiling water, immediately plunge the peaches into the cold water bath. You may need to change theΒ water or add ice to keep the water cold.
- The skin should come off the peach very easily now, just like peeling tomatoes.
Freezing Your Peaches
For smoothies:
We like to cut our peaches into quarters and freeze them on cookie sheets. Β Once they’re frozen, we put them into gallon freezer bags. Β This way the peaches won’t freeze together as one big block. To freeze sliced or cubed peaches:
Put whole peaches in hot water until the skin slips off. Then put the skinned ones into a big bowl of water you’ve prepare with ascorbic acid (1/2 teaspoonΒ ascorbic acid per 2 cups of water) or lemon juice.Β Cut into slices or chunks and place into quart bags. We’ve found that one quart bag stuffed full makes a perfect size pie. WeΒ don’t add sugar to freeze them, and it works just fine.
In a hurry to get them frozen?
We’ve tried freezing peaches whole, and although it takes up more space, they actually turned out pretty well. Run them under hot water and the peel slips off. After they thaw for a little while, you can slice them up. The peaches don’t brown at all because they’re still in their skins. A handy time saver!
However you prepare your peaches for freezing, place your freezer bags or containers as quickly as possible into the coldest part of your freezer, allowing room around the containers to promote fast freezing. Containers can be packed more economically space-wise after one day of freezing. Be sure to date your packages.
How to Plant a Peach Pit
- After you have eaten a few peaches, clean the pits and store them in the refrigerator untilΒ September or October.
- Plant the pits about five inches beneath the soil surface. Β It’s best to plant a few in case some donÒ⬙t sprout.
- Mark the location.
- Your tree will begin to grow in the spring!
- Keep the tree watered and fertilized and you’ll have fruit in 2-3 years!

We really enjoyed the peaches! They were large, beautiful, fragrant, and delicious. What did we do with them, you ask? Well, first we put them out on the counter and admired them. Then we stood around and inhaled in the divine aroma of fresh summer peaches until we were giddy. Then we began devouring them…seven children who all love a good peach! We all ate our fill for several days and still managed to put up a dozen bags in the freezer for peach cobblers and smoothies this winter when peach season is only a distant dream. π Thank you so much!

When we first picked up the peaches they were a little firm (unripe). After 24 hours they began to soften and they were delicious! Our family of 8 has eaten over half of our 1/2 bushel in 5 days and I have about 20 peaches left. I plan to freeze them tomorrow to make peach sauce to use with pancakes and waffles later in the year. We blend a cup of fruit with 1/4 c honey and 1 cup of orange /apple juice and bring to a boil. Mix 1 tsp corn starch with some OJ and whisk together then add to boiled mixture after removing from heat. Whisk together and serve over fresh pancakes/waffles! YUMMY!

We just got back from Switzerland where they make fruit fladas. They are so good!!! You make a crust of your choice, and spread it on a cookie sheet. Then spread some fresh fruit about 1/2 to 1 inch thick (like plumb halves or cherries or peaches). Pour a sauce over the fruit with some sweetening, flavor, corn starch or flour to keep from being too runny and some nuts or soy or milk for richness. Bake till done (crust is golden)Then enjoy!!!

That is a quart per dollar spent…not bad. We also made peach honey with the skins for pancakes in the morning. I loved the freestone peaches-& while I enjoyed the June peaches, I won’t be ordering any semi-freestone next year, it’ll be ALL freestone for me. The taste was better & working with them was TONS easier. I did notice more bruising, but maybe that was in the handling or be cause they were a bit more ripe than the semi-freestones? I didn’t can these. I froze one box & dried another in our Excalibur dehydrator, then vacuum-sealed them.

We ordered 6 boxes of Num 2. peaches and 4 boxes of blueberries. The blueberries were SO good, perfect, only a few bad ones in the bunch. Some of the best blueberries we’ve ever had! I wish I could get some more π The peaches weren’t ripe when we got them which was totally fine. They ripened up in 2 days. unfortunately about half of them had bad spots on them so we had to do cut off part of a lot of them. Well, I made peach ice cream and peach pie for the fourth and they have both disappeared. I think most of the peaches will be fairly ripe today and tomorrow so I don’t have much time, got to get to the kitchen. I have noticed a few whose pits had opened up and were black inside. The peach flesh seem to be okay but I cut off wide around that pit. I have never seen that in a peach before. -Lori Grissom

I still have a lot of blueberries left, after freezing 2 quarts, making 12 blueberry pancakes, 24 blueberry muffins, 12 mini loaves of zucchini blueberry bread, and feeding them fresh to my family for several meals and snacks. I am making blueberry freezer jam today, and I guess we’ll eat up the rest. We have eaten the peaches fresh, and I have frozen 2 quarts. With the rest, I’ll make peach jam and whatever else I decide. The peaches are very tasty. However, I was disappointed that when they arrived, they were all hard, and then ripened all at once. Now, they have to be frozen before they go bad. Also, when you cut them open, the pit is usually broken in half and black, sometimes with gooey stuff in there as well. -Joy

The blueberries were fresh and absolutely delicious. We can’t stop eating them plain π We bought “seconds” on the peaches. Many of them were partly green and hard when we got them. They have softened up and the part of the peach that isn’t green is yummy, but the green parts didn’t get any more ripe and are not good. I don’t know if they are seconds because of the green/not-ripe peaches. I hope the next batch will be better. -Rebecca B.
I ordered #2 peaches, because last years’ reviews were so wonderful…many people said that there was no reason to spend the extra $ on #1s. I was not expecting perfect-looking fruit, but I was disappointed about the amount of badly bruised peaches I received…most of them were not fit for just eating, but were okay sliced up to be put in the freezer I did have to cut off parts of lots of the peaches, though. I was planning on ordering again in July, but I’m not sure that I will. On the other hand, the blueberries were WONDERFUL. I haven’t baked with them yet, but the kids ate quite a few of them before I was able to freeze the rest. -Amber Weber

his was my first time ordering. There were a few more bruises than I expected after reading so many glowing reviews. Immediate sorting is necessary. I’d say about 40% of my box had bruises, with about 5 having a bruise covering 1/3 of the peach. But because they were so fresh, none had started rotting, and overall taste was great. Just got back in town and a friend had delivered my peaches and blueberries to my house. They are absolutely WONDERFUL!!!! We already went blueberry picking twice this year, and I love that for the experience for the children and for the freshness, but your berries were just way better than those we picked! And I try to buy my peaches fresh too–from the guy who sets up a stand on the road, but they were not good at all this year. These peaches are SO much better. Sweet, juicy–the way a peach should be. This is my way of putting in a request for another blueberry delivery, if possible. Your source for blueberries is wonderful. My friend, an organic farmer, and I did a side by side comparison of blueberries available at a farmers market here in middle TN (she said their berries are the best of the market). The ones from BNF won by a mile.
So I am hoping there will be another blueberry delivery soon! For sure I’d buy at least 2 boxes!

We left them out on the counter a couple days and then canned them and the peels came right off and they all split in half perfectly, so we could cut them. We only have 6 peaches left from the 2 boxes we purchased. They were SO sweet, SO juicy and SO peachy (aka, flavorful.) We ate a lot, canned 15 pints of preserves, froze 16 peaches whole and dehydrated a dozen or so. We bought #2 grade and I would do it again in a heartbeat! For the most part they were medium-large. When I got home from pick-up I immediately separated the ones with imperfections (nicks and bruises-about 15) from the “perfect” ones. Each morning for 3 days straight I set aside the ones that had to be dealt with THAT day. Well worth it! (BTW-the “imperfect” ones were perfectly usable, but had to be dealt with first thing!) -Addie Lewis

The Lance peaches were fabulous! #1 peaches are not realripe or sweet yet. we ate and canned all the #2 peaches. We may have lost only one, that is all. Great! The #1 peaches look teriffic! We will be eating them now, as the others are all gone. Oh, we did make a cobbler from the last of the #2 peaches. We’ll eat that tomorrow and the next day. I made it by slicing the fruit and placing it in the dish I wanted to bake it in. then I sprinkled the fruit with a little unbleached flour and raw sugar, stired it in a little. Then I made a crumble of half flour and oats, and a little salt. I stired it until blended, then added oil and vanilla, and again a little sweetener, enough to make a crumble, sprinkled it to cover the top and baked it until golden brown. Can’t wait to try it! The peaches we received in June were seconds but were perfect, no bruises all uniform in size and very sweet. Not so with the July peaches. They had much to be desired. The raw honey I purchased was AMAZING!!! It’s the yummiest raw honey I’ve ever tasted. I’m using it in everything The peaches were really good too. They are just now ripe enough to bit into. And I’ll be honest and say that, given what I read in the June reviews, I had more “bad” ones (meaning ones with large bad spots or rotting spots) than I expected. I purchased the “b” peaches thinking they would have some blemishes bruises, but these had more than I was expecting. BUT, for the price, I think it’s totally fair and the taste is delicious. The peaches have a tremendous flavor.We are eating them all the time.This batch seemed to be “squished” down into the box as at least 2/3rds had smashed bruise spots on them. This was not the case from the shipment we received about a month ago. I appreciate the more natural growing practices and the flavor is perfect. Just wish there had not been so many bruised peaches. I was pleasantly surprised at how good they looked. They were large and juicy. We canned 20 quarts, froze 22 quarts and made 7 quarts of peach jam. I ordered peaches in June and they were great. There was just the right mixture of ripe to not quite so ripe so that they lasted a week to 10 days. The ones I received in July were very ripe and a lot were bruised. I spent the Saturday after pickup day canning spiced peaches and canned peach pie filling. I don’t know if I just happened to be the “unlucky” one to get the bad boxes or what, but I wasn’t as pleased with this order of peaches as I was the first time. A lot of them were very badly bruised and I had to cut a big portion off. When I opened the second box, not only were the peaches bruised, but there was mold growing on the peaches! I guess I should have opened the boxes and checked when I picked up my order, but I was so pleased with them the first time, that I made the assumption that these would be just as good! I probably ended up throwing away 1/3 of may order because of damaged peaches π The ones that I did salvage, were good and sweet, but I was just disappointed that I had so many that were damaged! -Camille Hopper
The first batch was a better size for me. Both batches were very tasty. The first ones were smaller and since I froze them whole they fit better in the ziploc bags. -Kathy S
The peaches were pretty bad. By the time we sorted out the bad from the good we had about 10-12 whole peaches and then a small bowl of cut up peaches. Husband not happy. :))) -Patricia Pappis
I thought the first round of peaches was better than this second batch. This time, I had more that were bad and they started turning faster. We have frozen many, made lots of peach smoothies, and peach salsa. -Gretchen Thomas

My peaches were really bruised. Some of them had no taste while some of them where excellent. The honey was extraordinary! Will order the honey again. -Wendy Glisson
I ordered another 4 boxes of peaches in July…and although the flavor and juiciness was outstanding, there was a marked difference in the June and July orders. Keep in mind that both times I ordered #2 peaches. The July order had significantly more bruised and beat up peaches. It won’t stop me from buying again next year…but I will probably order more in June and fewer in July. Like I said…VERY tasty and SO much better than any store peaches I’ve tried this year. -Addie Lewis
I am usually very pleased with the fruit I purchase, but these peaches were pretty bad! They were extremely bruised and many were mushy and ruined. All in all I only got a few quarts canned out of a whole bushel. The few that were good tasted great, but there just weren’t that many. I’ve ordered #2’s before and they’ve always been wonderful..I think I just got a bad batch. -Allison Tinius
