Blackbird Heritage Farm has a commitment to environmentally responsible pork production from birth to the end product – our delicious sausage. Our USDA certified organic sausages are hand crafted in small batches using premium cuts of pork (shoulders, hams, and loins).
Folks are always amazed when they visit our farm. Where is the “pig barn?” Where is the smell? We’ve made it our goal to raise hogs in a manner consistent with our belief that the environment of our farm should be enhanced not destroyed. We aim to shatter the notion that hog farming has to be conducted in industrial operations where inhumane treatment of livestock is considered the norm. On pasture or in the woods, our pigs are given the freedom to roam, play and reproduce the way nature intended. We use Large Black and Red Wattle Hogs in our sausage and maintain breeding programs for each of these amazing, critically endangered breeds.
Our sausage has less fat than commercial brands because we don’t use off cuts in our sausage making. We incorporate leaner cuts with a ratio of fat we can control making our sausage leaner and tastier. We hope you enjoy experiencing the difference in our USDA Certified Organic sausage using pastured, heritage hogs!

Anise seed and fresh garlic are used in this sausage blend. Makes great meatballs with spaghetti for the kids or delicious in a pasta bolognese. Also great on the grill!
Spicy Italian Links (2 packs – approx. 12 oz each)
Our hot italian has a nice little flavorful kick from hot red pepper and fennel seed. Great grilled with peppers and onions.
Breakfast Links (3 packs – approx. 12 oz each)
This is your traditional southern style breakfast sausage with sage and black pepper being the predominant seasoning. Great with pancakes and maple syrup or crumbled up in gravy served over hot biscuits.

I was so excited to see the sausage on the order this time. We stopped eating any pork products a couple of years ago. My daughter, Jessica, met Sherri at a homeschool co-op and they hit it off. Jessica has been to Blackbird Hill Farm, has seen the pigs and how they are raised and has bought some of the sausage. We have really enjoyed it. I imagine you have tried it also and know how good it is. I just wanted to put a good word in for this product.
